Big shot chef and restaurateur Richard Sandoval (Maya) has added another high-profile venture to his ever-expanding portfolio of Latin American restaurants: Raymi, an elegant new "modern Peruvian" restaurant, opened last month in the Flatiron district. They're about to launch lunch service, which seems as good excuse as any to share these photos of the joint, which is as big and as beautiful as a Peruvian steamship. Also, they just added "boozy sno-cones" to the cocktail menu.
In addition to two spacious dining rooms, Raymi boasts a central Ceviche Bar and a second bar focusing on cocktails made with Pisco, a colorless or yellowish-to-amber colored grape brandy produced in Peru and Chile. Renowned Peruvian Chef Jaime Pesaque, who is collaborating with Sandoval on Raymi, owns a Pisco distillery with his family in Peru, and Raymi's bar is stocked with 30 exotic house-infused Piscos including Lemongrass, Purple Corn, Jasmine Tea, Tangerine, and Apricot.
The boozy sno-cones come in a variety of flavors, including Watermelon and Chicha Morada, and are spiked with Raymi’s house infused pisco. We're told lunch will be starting "soon," and will feature new items including Incan Lunch Boxes, which are similar to a bento box with four compartments, and a selection of Peruvian sandwiches. Pesaque's ceviche has been getting raves—particularly appetizing is the Hot Rock ceviche, pictured here.
Check out the full dinner menu below, and be advised that Raymi offers a good happy hour on weeknights from 5 p.m. to 7 p.m, when their cocktails, typically $13, are $8, and glasses of wine are discounted to $6, with $4 beers. There's also a bar menu of $3 Peruvian small bites. And on Tuesday, the happy hour lasts all night long.
