Have you capitulated to the Internet pressure and sampled the Rainbow Bagel yet? Or have you avoided making the pilgrimage to The Bagel Store? Do you wonder to yourself what kind of monster really wants to endure long and snaking lines just for one nibble of viral hype anyway? If you've somehow resisted thus far but still feel the urge to try one, then you're gonna want to break out the gel paste color—because now there's a recipe that let's you make them at home.

The Bagel Store Rainbow Bagelsby Gothamist

We've already taken a behind-the-scenes look at how Bagel Store founder Scot Rossillo makes his Rainbow Bagels, but the chefs at PopSugar have come up with their own home recipe for them. There's even directions on how to make the funfetti cream cheese that usually accompanies each bagel.

INGREDIENTS
Per each color:
1 cup warm water, 110º F
1/4-ounce packet active dry yeast
1 1/2 tablespoons granulated sugar
2 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1/2 teaspoon gel paste color
1 teaspoon vegetable oil

For bagels:
4 to 6 colored doughs
12 cups water

For confetti cream cheese:
1 cup cream cheese, softened
1 cup powdered sugar
1/2 teaspoon butter flavoring
2 tablespoons sprinkles, plus more for garnish

For the entire step-by-step directions on how to mix, pound, roll, and bake Rainbow Bagels in your own kitchen, visit PopSugar.
