Brooklyn sweet-tooths can loosen their belts and breathe a sigh of relief: Rightfully popular DUMBO bakery Almondine finally reopened yesterday, for the first time since Hurricane Sandy flooded its production kitchen, located in the basement of its Water Street shop.

While many businesses in the area were up and running within a few days or weeks of the storm, Almondine lost hundreds of thousands of dollars of equipment and lacked the flood insurance that might have facilitated a faster rebound. French baker Hervé Poussot, the shop's owner, told us he "did not think we'd have that much water" after the storm. But overflow from the East River ended up filling the basement with eight feet of water.

Luckily for Poussot, fans of the shop quickly pulled together to help the neighborhood staple reopen, starting a Friends of Almondine Twitter account and an online fundraising campaign which raised over $28,000 to help rebuild. Yesterday afternoon, the fruits of their labor were rewarded when Poussot dished out the long-awaited first batch of croissants, macarons, and other pastries.

Almondine's re-opening is a relief, considering how Sandy shuttered many Brooklyn businesses for good. But it's not entirely back to business as usual for the bake shop. They had to close their South Slope location in December, and Poussot tells us that closure is permanent. And yesterday's opening is "just the beginning," he said, adding that it's "going to take at least two weeks" before they're baking at 100%. But for now, he is just happy that "my neighborhood and landlord helped me" to reopen. "Slowly and slowly, people are coming back."
