Camillo In Prospect-Lefferts Gardens Will Bake Up Roman Street Pizza

The team behind Clinton Hill eatery Locanda Vini e Olii will open a new restaurant in Prospect-Lefferts Gardens on Tuesday, September 19th. Where Locanda Vini e Olii focused more on traditional Tuscan cuisine, the new restaurant, called Camillo, will serve "authentic dishes from Italy's capital," according to a press release.
One of the restaurant's signature menu items is pinsa, a Roman variation on pizza with a light, crispy crust made from a combination of flours that's a common snack on the streets of the city. The pinsa comes in several variations, like the capricciosa, with artichokes, prosciutto cotto, and olives ($14), and the amatriciana, with tomatoes and guanciale ($14). More familiar combinations—like margherita ($12) and bufala ($15) style pies—are also on the menu.
In addition to pinsa, Camillo's executive chef Michele Baldacci will offer classic Roman pasta dishes like carbonara and cacio e pepe, and large plates, or piatti, that include fried chicken with artichokes, eggplant, and sage ($18), and goat roasted with rosemary and anchovies ($22).
The restaurant is said to be named for Count Camillo Negroni, who supposedly invented the Negroni cocktail in 1919. It's no surprise that a restaurant also bearing his name would have a serious focus on drinks; highlights from the menu include the artichoke negroni ($10) and the rosemary spritz ($9). In addition to the creative takes on classic cocktails, a variety of beers and Italian wines are offered.
