Eataly's fine dining restaurant Manzo closed mid-February to prepare for a reboot as a meatery, butcher shop and restaurant. The fruits of that labor will be revealed on Friday, when the restaurant reopens with a new nose-to-tail menu and a whole lot of meat and fish, a vermouth-focused beverage program, and a butchery station open to curious visitors to the market and restaurant.

The restaurant was meat-friendly before, but this new incarnation doubles down on the animal protein, with an assortment of different types of prosciutto (if you do not order this with their incredible housemade mozzarella what are you even doing there?), steaks cut at the butcher shop, and the dedicated nose-to-tail menu.

For that last option, the restaurant receives a whole Raven and Boar heritage breed pig and a Chickering Farm young cow each week. From those, the kitchen will prepare an ever-changing selection of dishes using the meat from those animals.

There are a few non-meat dishes, too, including gnocchi in a spicy tomato sauce with ricotta and antipasti like their mozzarella paired with roasted carrots, carrot tops and a pistachio pesto. Also meat-free: the booze. They're offering over 30 different Italian and American vermouths, which they're also turning into cocktails like the Montanaro Spritz with Montanaro Vermouth di Torino, Montanaro Bitter, saffron and Flor Prosecco.
