Anthony Bourdain sure knows how to tease an opening, as details about his forthcoming food market leak out in drips and drabs. There's still no news about where this street food market will land, but partner in crime Stephen Werther dropped some deets yesterday in Singapore about what to expect when the market opens its doors at some point this year. We know it's going to be modeled after street hawkers but what exactly does that look like? If the cramped and cluttered streets of Tokyo as depicted in Blade Runner sound like a nice place to dine, step right this way...

"It's a bit more chaotic than how the hawkers markets are organised here. Hopefully, it will be as crowded and popular," Werther said of the design. "But it is supposed to be a mash-up of foods, styles, smells, tastes and visuals." He cited the Ridley Scott film as a design visual and a taste of the "chaos" they expect to cultivate. "It is meant to be crowded and chaotic because that's what hawker centres should be. It should activate all of your senses...and, yes, you should stand in line. Why not? It took them a long time to make it, you should be willing to wait in line to buy it."

There's a nice breakdown on Eater about the rest of the details, which are more about tone than substance. One concrete detail did emerge about a farmers market area that'll include "a produce market, a butcher shop, a bakery and a pastry shop, a tapas bar, a tea shop, and a 1,500 square-foot oyster bar" plus an "Asian-influenced" beer garden. That all sounds good as long as we're not eating noodles in the rain.
