Monday, October 13th is not just a day to celebrate the legacy of a genocidal explorer, it's also the last day to enjoy a Shake Shack burger in Madison Square Park before the operation is shut down for a several month overhaul concluding sometime mid-2015. To mark these two seemingly momentous occasions, the Shack will partner with Michelin-starred chef Massimo Bottura, who runs acclaimed restaurant Osteria Francescana in Modena, Italy. Yes but did he discover the hamburger?

All joking aside, the burger sounds pretty sweet: "custom-blend Pat LaFrieda beef patty ground with parmigiano reggiano, topped with cotechino sausage, salsa verde and Villa Manodori balsamic mayonnaise made with Chef Bottura’s Villa Manodori Artigianale balsamic vinegar from Trebbiano grapes grown in Italy." Kinda blows that cherry pepper relish right out of the water.

The so-called Emilia burger will be available only on Monday at the flagship location, which will sell the creation for $8.95 a pop. It's also an opportunity for Bottura to pimp his new cookbook—Never Trust a Skinny Italian Chef (Phaidon, $59.95), available at Eataly—so he'll be on-site during the afternoon to greet fans and watch as the 1,000 limited edition burgers are sold. And if none of that means anything to you, the regular menu will also be available until the restaurant closes that evening.
