Grand Central Terminal has a different kind of funk wafting through its hallowed halls today with the opening of an edible art gallery made of cheese. This morning, Castello debuted its real-life still-life exhibit inside Vanderbilt Hall, with six paintings displayed beside their cheesy counterparts. Even more exciting, visitors are encouraged to dive in and eat the art, so to speak, with ambassadors at the ready with knives and napkins to indulge your dairy desires.

As more samples are taken from the art pieces, the blocks will be replenished so they still resemble their individual inspirations. The delicious creamy blues are worth seeking out—you'll find them in the Clara Peeters piece—especially the Castello Black, which has a delicious, buttery flavor and soft texture. The Castello Aged Havarti, which is being passed around on platters, is also delicious if you can't abide the strong mold flavors of the veined varieties.

Also on hand, food artists Jim Victor and Marie Pelton, who are carving a large block of Selection Hirten cheese on site. The completed project will be an Amtrak train—slightly odd since Amtrak doesn't stop at GCT—which they're expected to complete at some point tomorrow. Like any other medium, Victor and Pelton are employing some heavy duty machinery including drills, files and other implements; maybe they'll even donate some shavings for your lunch if you ask nicely!

The edible still-lifes will be at the terminal today until 7 p.m. and tomorrow from 7 a.m. to 7 p.m.
