Chelsea has a new addition to its roster of tapas joints (see also: Txikito, Tia Pol and Boqueria) with the opening of Luis Bollo's Salinas, a new Spanish restaurant on 9th Ave. Bollo, a San Sebastian native late of groundbreaking Spanish restaurant Meigas, returns to New York kitchens after a stint in New Jersey with a menu of hot and cold tapas, plus larger homestyle Spanish favorites.
On the small plate front, there are blistered shishito peppers dusted with sea salt, crispy quail wrapped with bacon, plums, onions and mushrooms, and patatas bravas that are already drawing raves. Larger plates include head-on prawns a la plancha and toasted fideo pasta (a thin, vermicelli-like noodle) with chicken, chorizo, cockles and saffron. Portions of the menu will—wait for it—change seasonally.
The restaurant is named after the seaside areas where salt is harvested along Spain's Mediterranean coast (and not the California farming town where John Steinbeck was born). the 90-seat space, designed by Mary Catherine and Donald Mikula, boasts a retractable glass roof (whoa), a sea-inspired water wall, and a 35-seat garden. Salinas is open for brunch (sangria!) and dinner (more sangria!).
